3 Easy Recipes to Turn LUCKY BONES into Dinner

We’ve found that our broth makes a perfect substitute for just about any recipe that calls for a bone broth, while still giving you that great flavor that the recipe was intended to have in the first place. 

These 3 easy recipes will turn your jar of LUCKY BONES from a side dish into a full-blown meal that everyone will adore!

Tomato-Basil Rice

We love this recipe because of how simple yet unique it is. With a very short prep time, it makes for a delicious one-dish meal. This recipe will impress your guests and give you the chance to surprise everyone with the fact that it was made with a completely plant-based broth! Pair it with some crispy tofu and your dinner is served. 

Ingredients:

  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup tomato paste
  • 2 medium tomatoes, cored and diced
  • 2 cups long-grain brown rice
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 cups of aha Pure Foods LUCKY BONES
  • 1/3 cup lightly packed chopped fresh basil leaves

Directions:

  1. Preheat your oven to 400°F and coat a 15” cast iron skillet with cooking spray.
  2. Heat the olive oil over medium-high heat in a large skillet and begin to sauté the onions until softened. Add the garlic and tomato paste while stirring for an additional minute. 
  3. Mix in the rice, tomatoes, LUCKY BONES broth, salt and pepper into your skillet. 
  4. Cover the skillet with aluminum foil and bake for 1 hour. Uncover your skillet, and bake for an additional 30 minutes or until all the liquid has been absorbed. 
  5. Serve and enjoy!

Vegetable Risotto

This recipe is fun, delicious and can be made to your own liking! Feel free to add in any fresh vegetables and herbs that you may have lying around in your fridge to make this dish unique to you. Top with some lemon juice right before serving.  

Ingredients:

  • 7 cups aha Pure Foods LUCKY BONES
  • 8 ounce green beans
  • 2 tablespoons olive oil 
  • 1 yellow onion, finely chopped
  • 3 cloves garlic, minced
  • freshly ground black pepper 
  • 2 cups Arborio rice
  • ¾ cup dry white wine
  • 2 zucchini
  • 8 ounce green beans 
  • 1 cup cherry tomatoes, halved 
  • ½ cup coarsely chopped herbs
  • 2 tablespoons lemon juice

Directions:

  • In a medium pot boil your green beans and cook until tender. Remove from water and set aside. 
  • Heat your olive oil in a large pot over medium heat. Add the onion and cook until softened, stirring occasionally. Add in the garlic, salt and pepper and cook for an additional minute. 
  • Stir the rice into the pot and allow to toast lightly. Add the white wine and stir until fully absorbed. 
  • Add one ladle of broth into the rice. Allow to simmer and stir frequently until absorbed. Slowly add the broth, one ladle at a time, and stir in until absorbed. 
  • Cook the rice until al dente, about 20 to 30 minutes. Add in the zucchini, corn and tomatoes about 2 minutes before the rice is ready. 
  • Top off with the green beans, lemon juice and fresh herbs. 

  • Pesto Gnocchi Soup 

    This tasty gnocchi soup is a bowl of comfort. Garnish with pesto to add a kick of flavor that will have your taste buds begging for more. This recipe allows room for creativity, so add in some of your favorite vegetables and don’t be scared to season to your liking.    

    Ingredients:

    • 2 tablespoons olive oil
    • 1 small yellow onion
    • 1 cup diced carrots
    • 1 cup diced celery
    • 1 tablespoon minced garlic
    • 6 cups aha Pure Foods LUCKY BONES
    • 2 cans diced tomatoes
    • 1 ½ cups green beans
    • ½ teaspoon dried thyme
    • 1 medium zucchini
    • 16 ounce potato gnocchi
    • 3 cups chopped spinach 

    Directions:

    1. In a large pot heat your olive oil over medium heat. Begin to sauté the onion, carrots and celery until softened. Then, add the garlic and sauté for an additional 2 minutes, or until golden.
    2. Add LUCKY BONES, tomatoes, green beans, thyme and season to your liking with salt and pepper. 
    3. Bring broth to a boil. Add zucchini and cover. Reduce heat to medium low and simmer until vegetables are tender. 
    4. Add in gnocchi, cover and simmer until tender. Stir in spinach.
    5. Serve warm. Garnish with pesto.
